On Wednesday’s We Cook Vegan! #Wegan

Hey! It’s My Vegan List and I’m back with my last recipe for Zero Waste & Eco Friendly Vegan Recipe series! This last step to becoming zero waste is “Keeping Track!” I have the most fun in the kitchen when I make meals I’ve been planning to make. It’s hard to always use what you’ve purchased at the grocery store but that’s why it’s best to keep track of what you have and make do with them! I was really in my Panera Bread/ Dunkin bag with this one! I made a Date, Apple, Walnut salad with Lemon Agave Dressing. Although the dressing could have been a vinaigrette, I wasn’t feeling it and that’s okay! That’s the beauty of making your own meals, it’s all up to you! So instead I made a dressing with the juice of a lemon and some agave, simple. Next is my absolute favorite, Avocado toast with roasted tomatoes. Another shout out to Dunkin for this right here! It’s has great texture and after adding TJ’s green goddess seasoning this toast had great flavor!

Ingredients:


  • Spring Mix

  • 2 Chopped Dates

  • Sliced Apple

  • Handful of Walnuts (Raw From Trader Joe’s)

  • Lemon

  • Agave

  • Sourdough Bread

  • Avocado

  • Can of Fire Roasted Tomatoes



Instructions:


Firstly, Wash your spring mix! Chop your dates and apples and layer in a bowl with your spring mix and walnuts. Make your dressing by juicing a lemon and using a tsp of agave to thicken your lemon juice. Pour over salad after making your toast to avoid a soggy salad.

Toast your sourdough bread and while it’s toasting create your avocado mash. Using a ripe avocado, mix in your lemon juice to creat better consistency and spread over your toast. Add your tomatoes and pop back into the oven to warm up those tomatoes. I only left mine in the over on broil for about a minute or so, then I sprinkled Trader Joe’s Green Goddess seasoning on top and voila! I was ready to enjoy my meal!
